Ingredients

Scone dough

  • 110 grams Cheddar cheese, cubed
  • 30 grams Parmesan cheese, cubed or grated
  • 250 grams SR flour
  • 90 grams Wholemeal SR Flour
  • 80 grams Butter
  • 160 grams Milk

Filling

  • 1 heaped tbsp vegemite

Recipe's preparation

    Preheat oven to 200 C
  1. 1.     Grate cheddar (and parmesan if using cubed) 8 -10 secs/ speed 9. Set aside in another bowl. If you are using ready grated Parmesan add this to the cheddar now and combine.

    Note: no need to clean the TM bowl after grating the cheese

     

    2.     Add to TM bowl flours and butter. Combine 5-8 secs/ speed 5, or until mixture looks like breadcrumbs. 

     

    3.     Add the milk plus 3/4 of the cheese mixture and mix for 6 secs/ speed 6 or until mixture starts to come together. Do not over process.

     

    4.     Place dough onto a floured bench or thermomat. Don't worry if its all crumbly. Knead very gently into a ball. Then gently press out into a rectangle shape, roughly 35cm x 20 and around 1 cm thick.

     

    5.     Spread evenly with vegemite, then sprinkle over the remaining cheese.

     

    6.     Roll lengthways, until you have a long sausage shape. If you're using a thermomat or something similar, you can use the mat to roll the dough, like a sushi mat. Cut carefully into rounds around 2-3 cm thick (make sure you don't cut with a knife on your thermomat if using!). I like to use a sharp knife for this step, so the 'scroll' is identifiable.

     

    7.     Place onto a lined baking tray, brush with some milk. Bake for 20 mins. Remove from tray to a wire rack to cool down.

     

    Best eaten warm, but cold is great for putting in a school lunchbox or for a nice afternoon treat.

    One of my 'go to' recipes. I do half/half for the flours. I also change it for my boy who dislikes cheese and vegemite. For him, I ommit the cheese and use tomato paste and jalepenos

    Really yummy, especially with the wholemeal flour. 

    I didn't have any parmesan so I used a combo of pizza cheese and cheese.  Delicious hot out of the oven.

    Just made these again, this time with the vegemite instead of the pesto like I have done before.....they are definitely a hit in our house!

    This worked a treat and so quick and easy! I made mine with pesto rather than vegemite as my daughter LOVES pesto and I also sprinkled a small amount of grated mozzarella over along with the other cheese.......it's hard to stop at just one. I'll definitely be making these again.
