Ingredients
Rosemary Cranberry Crackers (Adapted from ATCO Blue Flame Kitchen)
- 200 g Milk
- 5 g apple cider vinegar
- 70 g walnuts
- 60 g pumpkin seed
- 2 sprig fresh rosemary, leaves only
- 200 g plain flour
- 70 g dried cranberries
- 80 g Flaxseed
- 1/2 level teaspoons baking powder
- 1 level teaspoons salt
- 30 g honey

- Preheat oven to 180 degrees
Put small jug onto thermomix lid and weigh in Milk and apple cider vinegar, set aside - Put 70 g walnuts and 60 g pumpkin seed into TM bowl, 8 min/Varoma/speed 1 measuring cup lid off
- Grease 2 x 12cm x 6cm or similar tins
- Add 2 sprigs fresh rosemary, leaves only, 200 g plain flour,70 g dried cranberries, 80 g Flaxseed, 1/2 tsp baking powder, 1 tsp salt
- Mix 3 sec/speed 2
- Add set aside milk mixture and 30 g honey
- 2 sec/"Counter-clockwise operation" /speed 4 until just combined (dough will be quite stiff)
- Put into tin, flatten with the back of a spoon and tap in on bench. Bake for 25mins or till golden around edges
- Remove from oven, allow to sit for 10 mins, remove from tin then cool completely for 2 hours (this is important or it will be too hard to cut).
Pre heat oven to 180 degrees - Using sharp knife (the TM serrated knife from toolkit ideal) slice into thin (about) ½ cm slices
- Place onto ungreased large tray and bake 15mins, turn and bake for another 10 or until golden
Cool and store in an air tight container for up to one week or freeze

Other flavour suggestions: fig, almond and fennel or apricot, macadamia and cardamon

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
