Ingredients

Dough

  • 60 grams warm water
  • 1 tablespoon dry yeast
  • 0.5 teaspoon sugar
  • 290 g full cream milk
  • 110 g unsalted butter
  • 25 grams sugar
  • 0.5 teaspoon salt
  • 1 egg
  • 1-2 pinches cardamom seed
  • 360 g plain flour

The Filling

  • 500 grams smoked bacon or speck, (diced finely)
  • 1 onions, small, finely diced
  • black pepper, freshly ground, (to taste)

Recipe's preparation

    Dough
  1. Place the yeast, water and sugar in a bowl for the yeast to prove
  2. Place milk, butter, sugar and salt into the mixing bowl and heat 5 mins / 60°C / sp 2
  3. Pour out the TM bowl into another bowl and quickly rinse with water to cool it, place the egg into the TM bowl and mix for 2 mins / sp 4
  4. After the eggs have been beating for 30 seconds, temper them by adding a very small amount (about 1/4 cup) of the scalded milk and butter mixture into the TM bowl through the lid while the blades are running for the second 30 seconds; add the remainder to the bowl, slowly over the next 30 seconds, and mix to combine for the last 30 seconds
  5. Add 120g of flour and combine 30 Seconds / sp 4
  6. Add the yeast mixture to the ingredients in the TM bowl set time 1 mins / sp 4 and add the remaining 240g of flour slowly though the lid along with the cardamom
  7. Then Kneed 3 mins / Dough mode"Dough mode"
  8. Empty the TM bowl onto a very lightly floured surface; scrape out all of the remaining sticky dough and add to the mixture; pinch into a ball and proof for about an hour
  9. The Filling
  10. Finely dice the Bacon and onion
  11. Heat up a frying pan and add bacon, fry until half done
  12. Add the onion and cook until browned around the edges, and most of the fat has been rendured, but the bacon is not crispy
  13. Add a generous amount of freshly cracked pepper
  14. Assemble the Pīrāgi
  15. After the dough has doubled in size, Knock down the dough and divide into 4 equal amounts. Roll one ball into a long sausage and cut into 9 even pieces.
  16. Using a rolling pin, roll out your first dough piece on a floured surface until it resembles an oval shape
  17. Place one small teaspoonful of the filling onto the middle of the oval shape and press edges tightly together. Form into a crescent or pillow shape
  18. Place on to a lined baking tray with the pressed seam on the bottom, Repeat this process until all are assembled. Leave a generous amount of space between buns as they rise quite a bit
  19. Cover trays with a tea towel and stand in a warm place for 30-45 mins to rise or double in size
  20. While these are rising, heat oven 205 deg;C.
  21. Bake 12 minutes
  22. Rub crust of each with a little bit of butter immediately upon coming out of the oven; remove to a cooling rack

Tip

They freeze beautifully, if they will last that long!

Heating frozen Pīrāgi

Oven:
When heating frozen Pīrāgi, place in an oven bag and heat 150°C for 10 minutes
Microwave:
ONLY FOR 20 SECONDS - (otherwise they become rubbery)
