Ingredients
Salad
- 1 Small Handful Coriander Leaves
- 1 --- small handful mint leaves
- 1 Lebanese cucumber, (or half English Cucumber)
- 1 carrot
- 1/2 red onion
- 2 medium tomatoes
- 100 g quinoa
- 100 g basmati rice
- 1200 g water
- 1 tbsp Vegetable Stock Paste (TMX), or a veg stock cube
- 1 can lentils
Dressing
- 1 Orange or Mandarin, Juice and Zest
- 1 tablespoon sherry vinegar, (can use balsmic or white wine vinegar too)
- 2 tablespoons olive oil
- salt and pepper to taste
- 1 pinch fennel seeds
- 1 tsp brown sugar
- 1 tsp wholegrain or dijon mustard

Insert mint and coriander into the bowl, chop 6 secs / Sp5.
Add roughly chopped carrots, cucumber, onion & tomoatoes. Chop 10secs/ Sp 5 (or until salad sized peices)
Empty into a large bowl/container. No need to wash bowl.
Insert steaming basket and add rice.
Insert water and stock into TMX bowl, and then lower basket in. Cook 5 mins /100C / Sp3.
Add quinoa, cook 15 mins / 100C / Sp3
Lift out, gently fluff with a fork, and set aside for liquid to drain, while you make dressing.
Empty & rinse TMX bowl. Add dressing ingredients. Mix 5 secs / Sp 5.
Place rice, quinoa, drained lentils, and dressing over the vegetables. Mix well and chill.
Give a final mix before serving

Tip
Can use in the TM5 or TM31.
Virtually vegetables can be used. If they require cooking, such as green beans, throw them in 5 mins after the quinoa goes in. Can use dried lentils by cooking in the steaming basket for 10 mins/100C/Sp3, before adding the rice.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
