- 3 Golden delicious apples
- 400 g sugar
- pinch salt
- 300 g apple cider vinegar
- 5 tablespoon fresh mint, finely chopped

1. Peel, core and quarter the apples. Place apples in Varoma, fill TMX bowl with 1000 g water and steam for 15 mins / Varoma / speed 3
2. Empty water from TMX bowl, place apples in and process for 15-20 sec / speed 9
3. Add sugar, vinegar and salt. Cook for 9 mins / 100 deg / speed 3.
4. Stir through finely chopped mint. Serve immediately or store in sterilised jars (should last about 6 months in fridge)

Last minute decision to make a mint jelly to go with roast lamb. This was delicious and enjoyed by all. We could taste both the apple and mint flavours. We made a third of the batch which was plenty for us. Thank you for the recipe.
Nice, but I’d suggest chopping the mint up in the TM first, then setting aside.
Lovely recipe. I made little jars for Christmas presents.
Loved this recipe. I used pink lady apples as that was all I had in the fridge - used 5 apples as they were only small. Also used heaps of mint (cleared out the garden!)
Will definitley be making a few of these jars for Christmas pressies too
