Ingredients
Chilli Jam
- 1/4 red onion
- 2 clove of garlic
- 1 teaspoon fresh thyme
- 2 cm ginger, sliced
- 6 long red chillies, chopped
- 2 little hot chillies, chopped
- 30 grams olive oil
- 1 red capsicum, chopped
- 400 grams tomatoes, halved
- 40 grams white wine vinegar
- 1/2 lemon, juiced
- 1 tablespoon fish sauce
- 1 teaspoon Pink Himalayan Salt
- 200 grams Rapadura, or sugar of preference

add onion,garlic,ginger,thyme and chillies to bowl chop 3 seconds speed 7 repeat if necessary
addoil saute 3minutes varoma speed 1
add rest of ingredients chop 4 seconds speed 6 repeat if necessary
cook 25minutes 100 degees speed 2 scrape down sides of bowl
cook 10minutes varoma speed 2 check after 5 minutes
once jam is set pour intoo steralised jars
Chilli jam will last for 3-6months unoped once open store in the fridge

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
