Ingredients

  • 1 can tomatoes, 800g
  • 2 large red onions, cut into small cubes
  • 1 tbsp curry powder
  • 1 tbsp salt
  • 1 dessert spoon mustard
  • 180 gram white vinegar
  • 80 gram raw sugar
  • 60 gram brown sugar
  • 1 tbsp cornflour
  • 1 bunch basil torn into pieces
  • 8 cm Piece of ginger cubed
  • 4 cloves fresh garlic cubed into small pieces
  • 1 Red chilli, quartered

Recipe's preparation

  1. Process garlic and ginger on speed 10 for 10 seconds. Then place all other ingredients except cornflour into Thermomix bowl.  Cook on 100 degrees, speed 1 for 40 minutes. 

    Make a paste with cornflour mixed in a little vinegar.  Add to relish while running and cook on 100 degrees, speed 1 for a further 5 minute.

    Pour relish into sterilised jars and seal. (Relish will be runny, but will thicken on cooling).

Tip

NOTE: I played around with this receipt by adding different spices & herbs. You could even up the chilli for a spicer effect!

    Now it this 400g of tinned tomatoes all up? or 2 tins for 400g, so 800g?

    Nice tasty and quite versatile relish. I'll probably chop the onions a bit more in the Thermomix next time. I added a chopped apple as per the original recipe.
