Recipe's preparation

    Wash and cook
  1. Wash the crab apples, place in a saucepan with the water, and simmer until soft, probably less than five minutes. Can also be done in the TM at Varoma, reverse speedCounter-clockwise operation"Counter-clockwise operation" soft. When the skins are broken and they are soft, push the flesh and water through a sieve into a bowl. You may like to push through a sieve twice.

  2. Boil to a paste

    Add the fruit puree and the water that it was cooked in to the TM bowl. For every cup of fruit puree, add the same volume of sugar. Mix at reverse speed 3 for 30 seconds, then cook at Varoma, Counter-clockwise operation"Counter-clockwise operation" soft for 35-40 minutes until drops of the mix gel lightly on a plate. The beautiful rosy colored syrupy puree can now be poured into sterilised jars or onto baking paper lined trays to set.

Tip

I used to let my crab apple crop go to waste until I found this recipe. This is a perfect accompaniment to a cheeseboard, a little more tart than quince paste. Adapted from Sally Wise's recipe for crabapple paste.

    Another great fruit paste recipe. Thanks for the crabapple version.

    I used a mouli rather than sieve. Mine was perfect after 35 minutes. I don't put mine in jars as I like a piece on a platter so that it can be sliced. I either do it plastic pottles that can be turned out, or a round cake tin, then cut into wedges. It makes fabulous gifts.
