- 130 grams Gruyere cheese
- 350 grams water
- 110 grams Butter
- 215 grams flour
- 6 eggs
- 1/2 tsp salt
- 1/2 tsp pepper

Grate parmesan cheese 9 secs/speed 9, set aside
Grate gruyere cheese 5 secs/speed 9, set aside
Rinse bowl
Place water and butter into mixing bowl and cook 2 mins 30 secs/100oC/speed 1
Add flour, and mix 20 sec/speed 4. Remove mixing bowl and set aside to cool for 10 minutes.
Preheat oven to 200oC. Lightly spray with oil and line 2 or 3 baking trays with baking paper and set aside.
Place mixing bowl back in position and mix speed 5; adding eggs one at a time through hole in mixing bowl lid onto rotating blades.
Add both cheeses plus the salt and pepper and mix 30 secs/speed 5.
Using soup spoon, place mounds onto trays, ensuring you have space in between for spreading.
Bake for 30 minutes, until dough is puffed, looks dry and golden brown - about 30 minutes. Halfway through cooking, reverse the positions of the baking trays to ensure even colour.
Delicious either hot or cold.
Tip
Could add some spices at the time of adding the cheese to give it a spicier flavour

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Taking the earlier comment into consideration, I embarked on making these. First made the batter according to instructions, using 6 medium-sized eggs (chose the smaller ones with the earlier comment in mind), and there was no mound to be made, it was very runny indeed. I added 100 grams of flour, it was still runny but I put the little puddles in the oven and some puffed up ever so slightly. The taste was great! My guests loved them. I then made a batch with another added 50 grams of flour and a teaspoon of baking powder, but no luck. Can you please review your recipe? Was something omitted? Was there a typo? The flavour was great, but the texture was no good, they were flat little pancakes.
Followed the recipe as per instructhons and the resulting pastry was too runny - ie pourig out of the piping bag. Was very dissapointed to waste good ingredients.
