Ingredients
Pork Belly
- 700 gram boneless pork belly roast
- 2 --- large potatoes, peeled and quartered
- 4 piece pumpkin
- 4 --- pickling onions
- 1 green apple, quartered, core removed
- 1 tsp olive oil
- 1 tsp salt
Fennel and Pumpkin Soup
- 1 onion, peeled and quartered
- 1 clove garlic
- 1 fennel bulb, roughly chopped
- 500 gram Pumpkin, roughly chopped
- 2 tbsp vegetable stock concentrate
- 500 gram water
- 30 gram olive oil

Lightly grease tray of varoma
Make cuts in the skin of the pork belly, and rub a little bit of oil and salt into the skin.
Place belly skin side up onto the varoma tray. Put tray in base of varoma and set aside.
Place onion, fennel and garlic into TM bowl. Chop on speed 5 for 5 seconds. Scrape down sides of bowl.
Add 30 gram of olive oil and saute 2 minutes/varoma/speed 2.
Place roughly chopped pumpkin in basket.
Add stock concentrate and water to TM bowl.
Place basket in TM bowl.
Place lid on TM bowl, and varoma on top.
Continue cooking until the meat is done.
Remove varoma and upend the pumpkin into the TM bowl.
Puree soup, starting at speed 5 and increasing speed to speed 9/1 minute.
Pour soup into serving dish, keeping a small amount back in the TM Bowl.
Preheat grill to 220oC.
Once the pork belly is cooked, remove from varoma; set aside the vegetables and apple in the Thermoserver to keep warm.
Rub an extra 1 tsp of salt into the skin of the pork belly. Place the pork belly onto an oven tray lined with baking paper and place in oven/or under grill to crisp up the skin.
This will take about 12 - 15 minutes depending on your oven.
Allow to rest.
Remove apple from Thermoserver once the soup is processed. Add the apple to the remaining soup left in the TM bowl turbo for 1 second to incorporate the apple for the apple sauce.
Serve with vegetables.

Can vary the vegetables according to your taste, vary the cooking time as needed.
Could add carrot to the soup or make a different soup entirely.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
