Ingredients
Savoury breakfast muffins
- 1 carrot, peeled, chopped into 3 pieces
- 1 zucchini, chopped into 3 pieces
- 10 button mushrooms, stalks removed
- Fresh Baby Spinach, large handful
- 2 heaped tablespoon Greek yoghurt
- plain flour, 1.5 cups
- 3 level teaspoons baking powder
- grated cheese, 1.5 cups (mix of Colby and Parmesan)
- 100 grams bacon, diced and sauteed to desired crispiness
- 2 egg
- 80 grams extra virgin olive oil
- 170 grams Milk

- Pre-heat oven to fan forced 180 degrees celsius.
Grease muffin trays.
Place carrot, zucchini, mushrooms, and spinach in Thermomix bowl, MC on.
Chop on speed 7 for 3 seconds.
Scrape bowl down and mix again on speed 7 for 3 seconds.
All ingredients should be finely diced.
(Chop down further if you are wanting to really hide the veggie component in these muffins)
Place all other ingredients into bowl with the MC on.
Mix on Reverse, speed 4, 30 seconds.
Scrape down sides of bowl and mix for a further 15-20 seconds. Mixture should be well combined.
Divide mixture between muffin pans and bake for 30 mins or until a knife inserted into the muffins comes out clean.
Eat warm or cold. Keep in the refrigerator or freeze and reheat when needed.
Tip
The vegetables used can be changed according to your taste. For a vegetarian option, omit the bacon and add extra mushrooms.
