Ingredients
Dough
- 100 g raw almonds
- 90 g Rice malt syrup
- 150 g Gluten free plain flour
- 130 g Organic Butter
- 1 teaspoon Vanilla Essence or Vanilla Paste

Heat oven to 180C
Grind almonds for 30 seconds, speed 8
Add and mix all remaining ingredients on interval speed until combined (a ball of dough will form)
Line baking tray with baking paper
Roll dough into small (teaspoon sized) balls
Place balls onto baking paper and then press/flatten gently with the back of a fork
Bake for ~20mins or until slightly golden

Tip
These cookies are fine for anyone who is fructose free/ gluten free or 'quitting sugar' hence they are not very sweet, you can easily add more Rice Malt syrup if you prefer.
They are also nice with cinnamon added to the dough.
