- 120 grams almond meal
- 240 grams sugar
- 3 drops Vanilla essence or extract

Weight the egg whites (here only 2 = 60gr)
Double the amount with almond meal
Double again with sugar.
(For exemple, with 100g of egg whites, it's 200g of almond meal and 400g of sugar)
Add a few drops of vanilla essence and mix 30s at speed 7

Wet your hands when forming balls, they won't stick
