Ingredients

  • 4 Bananas ripe
  • 100 g coconut oil, melted
  • 2 eggs
  • 220 g wholemeal spelt flour/ plain flour
  • 2 tablespoons bicarb soda
  • 1/4 teaspoon sea salt
  • 100 g yoghurt or milk kefir
  • 30 g cacao powder
  • 60 g Maple syrup

Recipe's preparation

  1. Preheat oven to 180c, line a loaf tin with baking paper and set it aside.

    Put coconut oil into the mixing bowl and melt on 37c speed 2 for 3 minutes or until all is melted.

    Add peeled bananas and blend on speed 6 for 10 seconds.

    Add all other ingredients and and mix on speed 4 for 30 seconds, or until all ingredients are combined.

    Pour mixture into the lined loaf tin and bake for 50-60 minutes, test with a toothpick or skewer to make sure it  comes out clean. Depending on your oven the cooking time may vary.

    Allow to cool inside the tin before removing. If you do not plan on serving straight away wrapping it in glad wrap keeps it nice and moist.
