Ingredients
Ripe Bananas
- 3 --- ripe bananas, halved
- 250 grams softened unsalted butter
- 250 grams raw sugar
- 2 --- eggs
- 125 grams yoghurt, (I use Vanilla Bean, but plain yoghurt is also great)
- 1 teaspoon vanilla extract
- 2.5 --- cups of plain flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 100 grams slivered almonds
- 2 tablespoon raw sugar
- 2 tablespoon Quinoa flakes
- 1 teaspoon ground cinnamon

"Closed lid" Place Bananas in bowl, and process for 3 seconds on Speed 3.
Add Butter, Sugar, Eggs, Yoghurt and Vanilla Extract and process on Speed 5 for 5 seconds until all combined.
In a separate bowl, combine Flour, Baking Soda, Baking Powder and salt and stir to combine.
"Gentle stir setting" Add to Banana mixture and blend for 5-10 seconds until just combined.
Spoon mixture into Muffin Tins lined with Paper Muffin cases.
Combine Almonds, Raw Sugar, Quinoa Flakes and cinnamon in a bowl, then sprinkle over the top of the muffins before baking.
Bake at 180degrees for 20-25 minutes or until a skewer comes out clean.
Serve warm or at room temperature.

Tip
I also make these Muffins for my children with a few chocolate bits scattered on the top before baking.

These are delicious... But 625g of flour did seem a bit much so I added 21/2 cups as per comment above which was around 320g flour and it was perfect.
It does sound alot, but the mixture needs the two and a half cups of flour to bring the mix to the right consistency. These muffins really are delicious and never last long with my kids. Happy baking!
Is the amount of flour really 625g? That sounds like an awful lot of flour? Otherwise these muffins sound delicious!
