Ingredients

Cookie Base

  • 110 grams Butter
  • 110 grams castor sugar, Raw or White sugar is fine
  • 65 grams brown sugar
  • 1 egg
  • 1/2 teaspoon Vanilla Extract, Bean Paste is also suitable
  • 275 grams plain flour
  • 1/2 teaspoon baking powder
  • 100 grams chocolate chips, Dark or Milk
  • 2 packages Oreo Cookies

Brownie Mix

  • 115 grams dark chocolate
  • 225 grams cream
  • 350 grams sugar
  • 4 eggs
  • 50 grams plain flour
  • 1/2 teaspoon vanilla extract, Bean Paste is also fine

Recipe's preparation

  1. A sinful but delightful recipe consisting of three layers.  The secret to this sinful delight, is the ingredients.  If you reduce the quantities it will affect the overall finish.  You want the brownie to be gooey, you want the cookie dough to remind you of a cookie!

    Make it fancy and prepare individual cooked portions and service with fresh whiped cream or ice cream.

  2. Preheat the oven at 180 degrees.

    Line a 20cm  x 30 cm rectangular cake tin with baking paper and leaving a generous overhang.  The brownie mix rises.

    Eggs and Butter should be at room temperature.

    Smooth and round glass jar to evenly press the dough into the cake tin.

     

  3. Making the Cookie Base

    Cream the butter and sugars on speed 4 for 20 secs.  Scrape the bowl and go again if necessary.  

    Add the egg and vanilla extract, mix for 20 secs on speed 4.

    This process is easier if both the eggs and butter are at room temperature. 

    Add the flour and mix for a further 20 secs.  Scrape the bowl and if all flour is not incorproated, mix for an additional 20 secs on speed 4.

    Now add the Chocolate Chips on reservse, 20 secs, spead 4.

    Pour the cookie dough into the lined rectangular cake tin and using a smoth and round glass jar, roll the jar across the dough, making sure the dough is level and into the corners of the cake tin.  

    Place the Oreo cookies in rows across the top of the cookie dough.

     

  4. Brownie Mix

    Grate the chocolate on speed 10 for 10 secs.

    Scrape the bowl and add the cream, and combine for 5 mins, 50 degrees, speed 2.  Scrape the bowl to ensure all is incorporated.

    Add the castor sugar, vanilla extract and eggs on speed 4 for 20 secs.

    Add the flour and mix for another 20 secs on speed 4.

    When complete pour the brownie batter over the oreo and cookie dough base.

    Place in a preheated oven, reduce the temperature to 160 degrees and cook for 40 mins.

    My brownie was very undercooked but the cookie base was overcooked. I left out in for an extra 5 mins to try and com the brownie. I wonder if I had used butter instead of cream it may have better?
