- 125 grams Butter
- 140 grams brown sugar
- 1 teaspoon vanilla essence
- 2 eggs, at room temprature
- 275 grams Self Raising Flour
- 170 grams sultanas
- 80 grams Cornflakes

1. Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.
2. Beat together butter, sugar and vanilla essence, 20 seconds/speed 4.
3. Scrape down bowl and repeat if necessary.
4. Add eggs one at a time; crack through lid and process 10 seconds/ speed 4. Repeat with second egg.
5. Add flour and sultanas to bowl 10 sec/sp4.
6. Scrape down bowl and repeat until combined.
7. Add cornflakes and either manually stir to avoid crushing the flakes too much, or 10sec/sp 4, "Counter-clockwise operation" .
6. Roll into balls, small or big, depending on the size cookie you want, remembering they will rise and spread so leave adequate room on tray.
7. Bake for 15-20 mins, leave on tray to cool for 5 minutes before transferring to wire rack.

Great recipe. Did everything as per recipe except instead of mixing cornflakes in I just rolled the balls in it before placing on the tray.
I also used crunchy nut cornflakes instead of the plain ones.
Easy biscuits to make. Reduced sugar to 100g and used wholemeal S/R Flour and they were yum!
Have demolished a whole batch! We only changed the sultanas for choc chips!
