- 200 g Dates pitted
- 100 g sugar raw, (optional)
- 200 g water
- 50 g Butter
- 40 g sugar
- 30 g Milk
- 1 egg
- 200 g SR flour

Place dates in the TM bowl and chop 8 seconds speed 7.
Add water (and sugar if using) and cook 5 minutes 100 speed 1.
Mix for 5 seconds speed 4.
Set the date mixture aside to cool and clean and dry the TM bowl.
Melt the butter and sugar in TM bowl 2 minutes at 50 C speed 3.
Add milk and egg - mix 10 seconds speed 5
Add flour and mix for 5 seconds on speed 5.
Roll out half the pastry and line a lamington tin. (Roll between two sheets of baking paper as it is very “short”. You can even use your fingers to push the pastry into the base of the tin as it will cook like cake mix and is quite “forgiving”).
Spread date mixture over the base.
Roll out the rest of the pastry and cover the date mixture.
Brush the top with milk and sprinkle with sugar.
Bake at 180 - 200 for 20 minutes or until golden brown.
Cool and slice.
