Easy as apple tea cake
- 125 g butter (cubed)
- 200 g Self Raising Flour
- 150 g raw sugar
- 1 egg
- 3 Granny Smith apples(cored cut into 1-2cm chunks/no need to peel)
- 1/4 level tsp ground cinnamon
- 1/4 level tsp Vanilla bean paste or extract

- Step 1- Preheat oven to 190c
- grease and line a round cake tin with baking paper
Step 2- Place butter into mixing bowl and melt 3 mins, 60 degrees, speed 1
Step 3- Place rest of ingredients ( sr flour, sugar, egg, apples, cinnamon and vanilla into mixing bowl with butter
Step 4- Combine for 20 seconds on speed 2 reverse. Make sure it’s on reverse or your apples will get chopped up !
Step 5- Pour mixture into lined cake tin ( don’t panic if it’s chunky and thick/ it’s meant to be ) bake for 40-45mins
- It should come out with a slightly carmalised top and be soft and beautiful on the inside!
This is absolutely delightful served warm as a desert with ice cream, custard or cream but equally as good as is with a cuppa!
You can reduce the sugar if you want and I have also made this with wholemeal self raising flour with great results.

Fabulous quick and easy cake. I had left over bought apple sauce from my pork roast (160 grams) and put in 50 grams sugar. Used 1 pear and 1 apple and worked out a treat. Thank you for sharing

Has anyone tried this with gluten free flour, if so, any changes to quantity of flour?
Very easy, fast to make and delicious. I used a combination of white and wholemeal flour, and used three small Granny Smith apples.
The texture of the cake was amazingly soft and moiste even a day later, albeit a little crumbly due to the apple dice. I think I might try grating them next time.
As recommended in the comments, I also reduced the amount of sugar I added to the mix and added a generous sprinkle to the top of the cake before baking.
So Easy and delicious
First time I've made an apple cake, and will make again.
I used 1/2 wholemeal and 1/2 white flour
used 60g raw sugar.
My apples were on the large size and probably 3 were too many
Possibly the easiest cake I've ever made! Absolutely delicious as a bonus. I used 100g of sugar as a few other reviewers had suggested (I only had brown sugar). The apples were 'mystery' apples off a tree in my yard, no idea what type but very tart which offset the sweetness of the cake perfectly. I'm still in awe of how simple it was. This will be a definite go to cake.
This is delicious!! I also used only 100g of sugar and I didn't have any apples so used canned apples and was perfect! Also when came out of oven I just put a tiny bit of butter on top and sprinkled some sugar and cinnamon. My new go to apple tea cake!
Been using RC for over 2 years and never felt the need to leave a review! Until this recipe! Quick easy and so so delicious! I halve the sugar and could possibly even half again as that’s more preferable to my tastes and I find the apples seeeten so much! I’ve just made in a loaf mould and it’s turned out perfect! Only thing bad I can say about this recipe is I just ate half with a fork, straight out of the oven and now my gestational diabetes is gonna pay 😂🥰
