Ingredients
Cookie Dough
- 320 g all purpose flour
- 270 g raw sugar
- 250 g unsalted butter, Room Temperature
- 6 egg yolks
- 1 teaspoon baking soda
- 1 teaspoon cream tartar
- 1 teaspoon vanilla essence
- 1 lime zest

1. Preheat oven at 180c
2. Place Raw sugar and Lime Zest for 15 seconds, Speed 10
3. Add butter and cream for 10 seconds, Speed 6
4. Add essence and egg yolk one at a time through the top of the lid while mixing at 30 seconds, Speed 6
5. Scrape down side of bowl
6. Add Flour, baking soda and cream tartar; combine for 10 seconds, Speed 5
7. Divide dough into 2 equal portions and roll each portion into a cylinder. Wrap in cling wrap and refrigerate for 15mins
8. Cut cylinder into desire size and bake for 10mins or until golden.
Tip
Ideas to use up all those egg yolks.
Freeze egg yolk with a sprinkle of sugar or salt, this will stop the egg yolk from becoming thick and harder to use.

These biscuits are delicious. The dough was sticky but I just scooped some into balls on the tray while waiting for the rest of the dough to firm up. Both were divine. Will be baking them again to use up egg yolks 😋
I just made it! They're delicious in taste, but it was diffucult to form a cylinder. The dough was soft and sticky even after 15 min in the fridge. Maybe I am not doing something in the right way? But although with an irregular form after baking they are perfect in taste. Thank you for sharing! I'appreciateeasy comment about the dough!
