Ingredients
Gluten Free Chocolate Orange Cake (refined-sugar-free)
- 45 grams dark chocolate, (gluten free)
- 180 grams dates, pitted, (I use the ones rolled in rice flour, as they render a better date 'sugar'
- Zest of an orange, (washed)
- 2 bananas, (the riper, the better)
- 3 --- eggs
- 100 grams oil
- 150 grams Milk, (I sometimes use home-made coconut milk, if I have any left-over)
- 180 grams Plain gluten free flour
- 2 teaspoon baking powder, (GF)
- 1 teaspoon bicarbonate of soda

Grind the chocolate and orange rind for 5-10 seconds, speed 8. Set aside.
Grind the dates for 10 seconds on speed 9 and set aside with the chocolate orange.
Add the bananas and eggs to the TM bowl and blend for 10 seconds on speed 5.
Add the choc orange and dates, oil, milk, flour, baking powder and bicarb of soda and mix for 30 seconds on speed 5
Divide into 2 round 18-20cm round cake forms and bake in the centre of a pre-heated oven for approx 25-35 mins on 180 deg or 170deg fan forced.
Tip
To decorate, I might use the chocolate ganache recipe from the EDC (which we did for Father's Day), or for something less rich, blend some cream cheese with some cocoa powder and honey. Cashew cream is also nice spread over the top. The choice is yours, depending on how healthy you would like the cake to be!
