Ingredients

Banana Bread

  • 260 grams plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • 150 grams Coconut sugar
  • 3 over ripe bananas
  • 2 Egg Replacer/Flax 'Eggs'
  • 1 teaspoon vanilla essence
  • 100 grams Coconut oil OR Nuttelex

Recipe's preparation

  1. Preheat oven to 175ºc and prepare loaf pan with non-stick paper, butter, whatever you use. 

    Place bananas, eggs/replacers, vanilla and coconut oil in the mixing bowl and mix on SPEED 4 for 5 seconds. Scrape down the sides with a spatula. 

    Add flour, cinnamon, powder, soda and sugar into the bowl (remaining ingredients) and mix on REVERSE SPEED 3 for 10 seconds. This time may vary depending on if you used oil or nuttelex and how ripe and squishy your bananas were. Give it another few seconds if needed to combine.

    Pour into the prepared loaf pan and bake for 50-60 minutes. 

    Let cool before turning out.

    Tastes great toasted and spread with nuttelex!

Tip

If you wish to add any variations like walnuts, dates, chia seeds, pepitas etc do this with the dry ingredients before mixing.

You can also add a squeeze of honey or maple syrup and reduce the sugar. Play around with the sweetness!

I love this with chopped medjool dates and walnuts but when baking for daycare snacks I omit the walnuts.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
