Ingredients

Greek honey pistachio cake

  • 45 g almonds
  • 135 g sugar
  • 1 orange
  • 1 lemon
  • 90 g plain flour
  • 120 g semolina
  • 3/4 teaspoon baking powder
  • 3 eggs
  • 135 g Greek yoghurt
  • 120 g mild olive oil
  • 150 g pistachio nuts
  • 100 g honey

Recipe's preparation

    1. Preheat oven to 180o C. Grease and flour a cake tin.
  1. 2.  Add almonds to mixing bowl and mill 10 sec/speed 9.  Set aside.

  2. 3.  Add caster sugar, lemon & orange zest to mixing bowl and mill 10 sec/speed 9.

  3. 4.  Add flour, semolina, baking powder, eggs, Greek yoghurt and olive oil to the bowl and mix for 20 sec/speed 4.

  4. 5.  Pour mixture into cake tin or oven proof dish and bake in the centre of your oven for 30 - 40 mins.  Set aside cake to cool.

  5. 6.  When cool, poke holes into cake all over with a knife, this will allow the sauce to permeate the cake.

  6. 7.  Place pistachio nuts into the mixing bowl and roast for 3 mins/Varoma/speed 1. 

  7. 8.  Crush pistachios for 4 sec/speed 7.

  8. 9.  Add honey, orange and lemon juice and heat 2 mins/100oC/speed 1.

  9. 10.  Pour pistachio & honey mixture evenly over the cooled and pierced cake allowing the juice to soak into the cake.

Tip

Serve with a dollop of Greek yoghurt and fresh cut fruit.

Jamie's Greek Honey & Pistachio Cake

    Made this for a dinner party last night. Whilst the guests liked it, I didn't. I did not realise that Jamie's meant Jamie Oliver. My experience with his recipes has not been favourable but that is another story. The above recipe does not tell you what size cake tin to use (I used 20cm which is correct for this recipe). It does not tell you what to do with the almonds once you set them aside but I assumed they needed to be added with the flour. It does not tell you whether to use coarse or fine semolina - I used coarse but the recipe I found when I googled Jamie's recipe uses [200g] fine semolina. Other differences include the amount of sugar [225g] which is stated as caster sugar (but not above), huge difference in the amount of almond meal [225g],greek yoghurt [225ml] number of eggs [5], amount of oil [200ml], amount of flour [nil]. Baking powder is the same. Whilst the cake uses the zest of one orange and one lemon, the syrup only uses the juice of the orange - not the lemon as stated above. The list of ingredients for the syrup are;a handful of walnuts, a handful of pistachios, a handful of raisins, juice of one orange and 100ml of honey. So 150g of pistachios as stated above is way too much. I understand the intention is to adjust the recipe for the thermomix but in my opinion, this did not work.
