Ingredients

Koulourakia

  • 250 grams sugar
  • 1 orange
  • 180 grams Butter
  • 3 eggs
  • 1 teaspoon vanilla essence
  • 650 grams plain flour
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • sesame seeds, for sprinkling

Recipe's preparation

  1. Place sugar and the peel from one orange in the bowl and pulvarise for 20 seconds, speed 10.

  2. Cube butter and add to the bowl. Mix for 3 minutes on speed 4, until light and creamy.

  3. Beat the eggs in a separate bowl, reserve about 2 tablespoons for the egg wash at end, tip the rest into the TM bowl, along with vanilla essence and juice from the orange. Beat for 1 minute on speed 4.

     

  4. Add the dry ingredients, (except for sesame seeds) and mix for 10 seconds on speed 6.

     

  5. Dough mode"Dough mode" for one minute. You may have to assist by placing the spatula through the opening. Then turn dough out onto the thermomat and slightly hand knead and shape into a rectangular blok. The dough will be sticky but there is no need to add any more flour, rather place it in the fridge to chill for an hour.

  6. Take the dough out of the fridge ten minutes or so before working on it. Break off a piece about the size of a small walnut. Roll out to a long thin piece, like a pencil (about 20cm long) then double over and twist.

  7. Place onto a lined baking tray, allowing room for expansion. Glaze with reserved egg wash and sprinkle with sesame seeds.

  8. Bake in a moderate oven, 180 degrees, for 15 minutes.

  9. Allow the koulouria to cool on a wire rack and then store in an airtight container. These will keep for a few weeks.

    Turned out so well, I added a large teaspoon of aniseed to the dough and it gave a lovely subtle flavour along with the cinnamon and orange. Thanks for sharing your recipe!
