Ingredients
Base
- 150 gram Butter
- 70 gram raw sugar
- 1/2 tsp Vanilla Exract.
- 225 gram plain flour
- 1 tablespoon cornflour
Topping
- 280 gram raw sugar
- 1/2 Lemon peel, removed with good peeler
- 4 eggs
- 60 gram plain flour
- 160 gram lemon juice, approx 3 squeezed lemons

Line a 16cm x 26cm (approx) slice tin. Preheat oven to 180C.
Place butter in bowl and melt for 2.5 minutes at 60C on speed 3.
Add sugar and vanilla and flours to melted butter and mix for 10 seconds on speed 4. Scrape downs sides of bowl and repeat.
The mixture will appear crumbly which is normal. Place mixture into prepared slice tin and press down with back of spoon.
Bake for 15-20 minutes or until golden. Remove from oven to cool
Place sugar and lemon rind into bowl and mill for 20 seconds on speed 9.
Add eggs and flour to sugar mix and mix for 30 seconds on speed 3. Scrape sides of bowl and add lemon juice, mix for a further 30 seconds on speed 3-4.
Pour over the base and cook for 25-30 minutes or until just set.
Cool completely in the pan.
Cut into pieces, can be served dusted with icing sugar.

Not sure what happened but this recipe didn't work for me. The base was very crumbly and the topping once cooked went to the bottom of the slice with the biscuit ending up on top. Strange!
