Ingredients

Base

  • 140 grams Butter
  • 340 grams Self Raising Flour
  • 2 Eggs.
  • 90 grams sugar

Lemon Filling

  • 60 grams Butter
  • 400 grams sugar
  • 400 grams Water.
  • 40 grams custard powder
  • 40 grams cornflour
  • 3 Lemons juiced

Marshmallow

  • 170 grams castor surgar
  • 370 grams hot water
  • 1 1/2 tablespoons gelatine power
  • 1 teaspoon vanilla

Recipe's preparation

    Base
  1. Preheat oven at 180*C   melt butter 3min/60c/speed2 then add all other ingredients (i like to add 60grams coconut to the base as well) then pop on to large tin bake for 15mins                                                                                                   

  2. LEMON FILLING
  3. add all ingredients cook 16mins/90c/speed 3 if the lemons are small I use 6. then place on slightly cooled base

  4. MARSHMALLOW
  5. place sugar gelatine and hot water into bowl cook 7min/100c/speed2. Remove the lid and cool to room temp. then inset butterfly [lace basket on top of the lid and whip for 3min/speed4. Remove the basket and whip for another 3min speed4 when thick place on lemon sprinkle with coconut and set in fridge for 30mins

    Great recipe, found the marshmallow needed about 25 minutes though to get it thick. I would also add less water only 250gms as still too runny after that long. You haven’t put what the following steps are in base so I just mixed on speed 4 for 45 seconds after initial step.

    I reduced the sugar in the filling by 60 grams and still found it sweet enough. Very nice, will definitely be making this again. Thanks for the recipe

    I have had trouble getting my Marshmallow to thicken. I have whipped an extra 5 times and still kt is like liquid. I followed the recipe to a T. What have I done wrong????

    Lovely slice thank you , I did have to make marshmallow twice though as tried it with gelatine leaves ( big mistake) . Second time gelatine powder worked out well .
