Ingredients
- 500 gram Plain Flour.
- 1 teaspoon salt
- 2 teaspoons bicarbonate of soda
- 4.5 teaspoons cream of tartar
- 75 gram cold unsalted butter, Diced
- 300 gram Milk
- 1 egg, Beaten, for egg wash

Preheat oven to 220 degrees celcius (200 degrees fan forced)
Add flour, salt, bicarbonate of soda and cream of tartar to TM bowl
Weigh butter into TM bowl. Blitz "Closed lid" 10 seconds Speed 9. The mixture should now look like damp sand. Blitz for a few more seconds if needed.
Scrape down sides of bowl with spatula. Weigh in Milk into TM bowl. Mix "Closed lid" on Speed 5 until just combined, approx 5-7 seconds
Turn our dough onto a floured surface or thermostat, and knead lightly to form a dough.
Push or rollout to 3cm thicknes. Dip cutter in flour and stamp out at least 10 scones. you will get 12 from this, but you may have to retool for the last 2.
Place on baking tray very close together - the idea is that they bulge and stick together on cooking
Brush the tops with the egg wash
Place tray in the oven and bake for 10-12 minutes.
Serve with Jam and cream and enjoy!

Variation:
Apple Strudel Scones
Once turned out onto Thermomix or floured surface, add 1 tablespoon of sultanas, 1 teaspoon of sugar and 1/2 teaspoon or cinnamon, plus some chopped dried apple. knead into scones before cutting out

Fantastic recipe, I added some tasty cheese and parmesan and nutmeg then sprinkled some more cheese on top for a savoury spin!
