Ingredients

Little Xmas Pudding Cakes

  • 150 g Dried pitted dates
  • 150 g dried figs
  • 200 g mixed glace fruit, (any combination - I like cherries, apricots and pineapple)
  • 125 g raisins
  • 75 g sultanas
  • 100 g brandy, (one MC full to top)
  • 125 g butter, cut into pieces, at room temperature
  • 1/2 cup golden syrup
  • 2 eggs, at room temperature
  • 1/4 cup plain flour
  • 1 teaspoon ground nutmeg
  • 3/4 teaspoon ground cinnamon
  • 2 cups fresh breadcrumbs
  • Icing sugar, to serve

Recipe's preparation

    Little Xmas Pudding Cakes
  1. Preheat oven to 160 degrees C. Grease a 24 capacity mini muffin pan.

     

  2. To prepare breadcrumbs, place frozen bread slices (about 4 slices makes two cups of breadcrumbs) in TM bowl and mill for 10 seconds at speed 6. Remove from TM bowl and set aside.

  3. Place dates, figs and mixed glace fruit in TM bowl and chop for 8 seconds on speed 5.

  4. Add raisins, sultanas and brandy and mix / heat for 5 minutes at 80 degrees C on Reverse + speed soft. Remove from TM bowl and set aside to cool, in a large bowl,  for about 15 -30 minutes.

  5. Place butter, golden syrup and eggs into TM bowl and mix for 20-40 seconds on speed 5-6.

  6. Sift flour, nutmeg and cinnamon over fruit mixture. Add breadcrumbs and butter mixture and mix well.

  7. Spoon mixture into muffin holes. Bake for 22 to 25 minutes or until cooked. Cool for 5 minutes, then turn onto a wire rack. Repeat with remaining mixture. Dust little pudding cakes with icing sugar.

    Thanks for commenting korrick - hope you and your family liked them. I usually make a few batches at this time of year - wrap in clear cellophane, add a bow and a sprig of holly and give as Christmas gifts.

    tmrc_emoticons.)I used fruit juice instead of brandy as kids were eating them. also didn't have full amount of glace fruit so put in same quantity of glace ginger and craisins. they're cooking at the moment so don't know how they taste, but they certainly looked good.
