Ingredients

Nectarine & Blood Orange Frangipane Tart

  • 45 g raw sugar
  • 1.5 vanilla beans
  • 300 g plain flour
  • 1 pinches ground sea salt
  • 3 tbsp sour cream
  • 150 g Butter
  • 150 g Raw caster sugar
  • 1cup almond meal*
  • 2 eggs
  • 1 egg yolk
  • 40 g plain flour
  • 1 tbsp melted butter
  • 3 tbsp blood orange marmalade
  • 6-8 nectarines (remove stones, skins on, sliced

Recipe's preparation

    Vanilla shortcrust
  1. Lightly coat pastry brush with melted butter and use to brush flan tin to prevent pastry sticking. Set aside. Mill sugar and vanilla bean for 12sec/speed 10. Add remaining ingredients except sour cream and mix 8 sec/speed 6. Add sour cream and knead for 30 secs. Tip dough out and roll into ball, wrap in Glad Wrap and refrigerate for 10mins. Remove and roll out to flat circle and line flan tin. Store in freezer for 30mins.
  2. Frangipani filling
  3. Add butter and sugar to bowl and mix 12sec/speed 3. Scrape down bowl and repeat while pouring eggs through lid. Scrape down bowl and add almond meal and flour. Mix 11sec/reverse speed 3.
  4. Turn on oven to 180deg (fan forced) Remove pan from freezer. Warm up marmalade in microwave for 25 secs and gently spread across base of pastry, then top evenly with the frangipane mix. Arrange nectarines as shown in photo then dust with caster sugar. Bake in oven for approx. 30mins or until frangipane is set. Remove from oven and set aside in pan to cool completely. Dust with icing sugar to serve. Serve with thickened cream or ice-cream.

    * as an alternate to almond meal, grind approx 150g raw almonds 15sec/speed 9
