Ingredients

Paleo Chocolate Brownies GF

  • 85 grams coconut oil, Can use butter if preferred
  • 180 grams dark chocolate chips, Use dairy free if needed
  • 2 eggs
  • 160 grams Coconut sugar, Can use regular granulated sugar if not making paleo
  • 25 grams cocoa powder
  • 3 tablespoons arrowroot flour, Can also use tapioca flour
  • 3 tablespoons dark chocolate chips, extra for topping
  • 2 teaspoons vanilla extract
  • 1 pinch sea salt

Recipe's preparation

    Method
  1. Line square brownie tin with baking paper and set aside.

    Preheat oven to 180 degrees
  2. Place coconut oil or butter and 180g chocolate chips in TM bowl and melt for 2min 65 degrees sp Gentle stir setting"Gentle stir setting" should be glossy and completely melted. Scrape sides and melt for an additional 30sec if required. Transfer into small bowl to cool slightly. Clean and dry mixing bowl.
  3. Attach butterfly whisk. Place eggs into mixing bowl and whisk for 1min sp4 until pale and fluffy. Add sugar and mix for an adittional 1min sp4. Scrape sides of bowl and repeat if required.
  4. Add cooled chocolate mix back in as well as vanilla extract Mix 15sec sp 3. Scrape sides of bowl and repeat.
  5. Add in cocoa powder, arrowroot flour and salt and mix 40sec sp 3.5. Scrape sides and repeat until well combined.
  6. Remove whisk.

    Add 2 tablespoons of chocolate chips and stir with spatula.
  7. Pour batter into prepared tin and sprinkle with remaining chocolate chips on top.

    Bake for 25mins at 180 degrees until mixture is just set - be careful not to overcook.

    Turn oven off and leave the brownies in for a few minutes to cool before removing (this helps the middle not to sink in)
  8. Allow brownies to cool in tin for 10minutes before placing on wire rack and cut and serve as desired
