Passionfruit Melting Moments
- 250 g unsalted butter, softened
- 1 teaspoons Vanilla Bean Paste
- 100 g pure icing sugar
- 315 g plain flour
- 40 g cornflour
- 125 g Butter, softened

- Preheat oven to 160 degrees. Line 2 baking trays with non-stick baking paper.
- Add 100g icing sugar, 250g unsalted butter and 1tsp of vanilla bean paste.
- Cream 1 min sp3.
- Scrape down the sides and repeat 1 minute sp3.
- Add 40g cornflour
- Add 315g plain flour
- Combine 25 secs sp 3.
- Check that all ingredients are combined. Don't overbeat as the mixture will be too hard to roll into balls. If the mixture becomes too soft and buttery place in the fridge for 5-10 mins to firm up before rolling.
- Roll heaped teaspoonfuls of mixture into small balls. Place on trays. Using a fork dipped in flour, lightly flatten each biscuit until 1cm thick. Bake for 15 minutes or until firm. Cool on trays for 10 minutes. Transfer to a wire rack to cool completely.
- Add 100g softened butter and 300g icing sugar mixture.
- Cream from 2mins sp 3 "Counter-clockwise operation" .
- Scrape down the sides of the bowl and repeat 2mins sp 3 "Counter-clockwise operation" . At the 1 minute mark add the passionfruit pulp through the mc hole in the lid.
- Spread flat side of 1 biscuit with 1 teaspoon of filling. Top with another biscuit. Repeat with remaining biscuits and filling. Dust with icing sugar. Serve.
