Peach Biroche
- 1/2 --- brioche dough
- 1 peach
- 2 tsp ground cinnamon
- 1 tablespoon brown sugar
- 1 tablespoon Butter, or almond butter

Prepare the brioche dough: //www.recipecommunity.com.au/recipes/brioche/105346
Divide the dough in half and use half for thie recipe and maybe freeze the other half.
After the dough has risen once, gently punch down and roll out into a rectangle, twice as long as it is wide.
Dab the butter across one long end, then sprinkle the sugar and cinnamon oover the butter.
Peel, slice the peach quite thinly and put it over the butter, sugar, cinnamon mixture.
Roll up the dough fom the long side, then slice into rounds - like a pinwheel scone. Put into large muffin tin or just on a baking tray and prove for about 20 minutes until doubled in size.
Bake at 200 degrees for between 10 and 20 minutes.
