Ingredients

  • 200 g Dates (pitted)
  • 3 Bananas (peeled), approx 250g
  • 100 g softened butter
  • 2 eggs
  • 200 g plain flour
  • 2 tsp baking powder
  • 1 pinch salt
  • 100 g buttermilk
  • 1 tsp Vanilla Bean Paste, (or extract or essence)

Recipe's preparation

    Prepare Mixture
  1. 1.  Preheat oven to 180 degrees

     

    2.  Add 200g dates to bowl   6 sec / speed 6 (to chop)

     

    3.  Add 3 bananas   6 sec / speed 6 (to mash)

     

    4.  Add 100g softened butter, 100g buttermilk  and 2 eggs  20 sec / speed 4 (to combine)

     

    5.  Add 200g plain flour, 2 tsp baking powder, 1 pinch salt, 1 tsp vanilla bean paste   20 sec / speed 4 (to mix)

     

    6.  Use spatula to scoop mixture into silicone moulds or paper patty pans and place in oven tray. 

     

  2. Bake
  3. 7.  Place in oven for 15-18 mins 

    (muffins are cooked when touched they spring back)

    8.  Allow to cool on oven tray for 10 mins

    9.  Place on cooling rack to cool before placing in an airtight container

     

    10.  Sit down with a cuppa, Enjoy! Try to stop at one tmrc_emoticons.;)

Tip

Buttermilk can be replaced with cream.

Vanilla bean paste can be replaced with vanilla extract or vanilla essence.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     They smell absolutely divine but even though they have been in the oven for ages, they are still not cooked in the middle. Any suggestions on how to fix this for next time?

    Yum!  I love that you don't need sugar for these to be so tasty.  I scraped the bowl after step 4 and re-mixed and then after step 5 too to make sure I was scooping up all those gooey dates. Really great for little ones.  Thanks for the recipe.

    Mine turned out really gooey like not cooked in the middle but they were in the over for like 40 mins and the outside was starting to go hard. What did I do wrong?

    Thank you, thank you, thank you!  I have tried around a dozen sugar free muffin recipes for my sugar addicted 10 year old and he has hated all of them. Made these last night, put one in his lunchbox, expecting another failure, but low and behold, he LOVED it. All smiles from school pick up. Yay!

    After adding the eggs etc & combining, run the spatula around the bottom of the bowl to loosen the date mixture so it all gets incorporated.

    Awesome! I substituted with gluten free plain flour, nuttelex and lactose free milk! They tasted so amazing the hubby wants them as snacks to take to work tmrc_emoticons.)
