Sugarfree Afghan Biscuit
- 200 g Butter
- 100 g Monkfruit sweetener
- 120 g almond meal
- 40 g tapioca flour
- 30 g cocoa powder
- 1 tsp vanilla extract
- 60 g Chopped walnuts
- 2 tsp chia seeds
Chocolate Icing
- 20 g Butter
- 200 g icing sweetener
- 20 g cocoa powder
- 2 tbsp water
- 12 piece walnut, halved

- preheat oven to 180°C. Line a baking tray with baking paper and set aside.
- place butter and sweetener into mixing bowl and mix 20 sec/speed 4
- scape down sides of mixing bowl with spatula and mix a further
20 sec/speed 4 scrape down sides of mixing bowl with spatula - add almond meal cocoa powder, tapioca flour, chia seeds and vanilla mix 10 secs/speed 4 scape down sides of mixing bowl with spatula
- add chopped walnuts and combine 10 sec"Counter-clockwise operation" speed 2
until combined - place tablespoons of mixture onto baking trays and press down lightly. bake for 15 mins. set aside and cool completely
- place butter in mixing bowl and melt 2 mins/50°C/speed 2
- add sweetener, cocoa powder and water mix 10 secs/speed 4
spoon over cooled biscuits and decorate with a walnut half
for the biscuit
