- 400 g sweet potato

- 60g Rapadura Sugar
- 1 teaspoon Vanilla powder
- 1 teaspoon baking powder
- 21/2 tablespoons Coconut Flour
- 3 tablespoons Cacao

- 1. preheat oven to 180 degress on fan force
2. add chopped sweet potato and blend spped 8 for 5 seconds
3. add remaining ingredients and blend speed 4 for 15 seconds
4. place into lined rectangle tin and bake in oven for 25-30 minutes
dust with cacao

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Great use of excess sweet potatoes. They are very moist, and fall apart easily. But I cut and froze them and they taste incredible warmed up in the oven. Seriously delish
Very moist and I added an extra table spoon of almond meal, would possibly add more next time. Nice flavours
So easy and yummy! My only suggestion would be to add almond meal or even chickpea flour as the coconut left it really really moist.
How much cacao?
Is the cacao missing from ingredients??
