Ingredients
batter
- 350 g grated zucchini
- 125 g Butter
- 150 g brown sugar
- 75 g white sugar
- 3 eggs
- 400 g plain flour
- 1 tsp vanilla
- 125 g Yogurt
- 20 g cocoa
- 2 tsp bicarb soda (baking soda)
- 1 tsp cinnamon
- 1/2 tsp mixed spice
- 1/2 tsp salt
- 50 g Chocolate Pieces, (optional)

Prepare a loaf tin or 25-cm2 pan by lining it with two crosswise strips of baking paper. Preheat oven to 170 C.
Grate zucchini traditionally or chop 3 sec/speed 4. Set aside.
Cream butter and sugars until light and creamy 10 sec/ speed 4.
Add the eggs, one at a time, with a spoonful flour to prevent curdling. 3 sec/speed 2.
Add vanilla and yogurt, mix 5 sec/speed 5.
Add dry ingredients (except for choc pieces), mix 10 sec/speed 4.
Add zucchini and mix "Counter-clockwise operation" 20 sec/speed 8. Push zucchini into batter with spatula, if neccessary.
Turn mixture into prepared pan. Sprinkle surface with small pieces of chocolate, if desired.
Bake at 170C for 45 minutes, or until centre feels firm and a skewer comes out clean.
Tip
Can be prepared in muffin tins. Can be frozen for up to two weeks.

So glad you and your kids enjoyed this as much as my family does! I've edited the recipe but I think adding the choc chips to the batter (rather than on top) would only improve this recipe.
Can also be made as muffins which freeze nicely for kids' lunches.
