Ingredients

  • 1 1/2 teaspoons Cardamon, removed from pods
  • 225 grams Milk
  • 120 grams sugar
  • 1 package dry yeast, approximately 2 teaspoons, or 20 g crumbled fresh yeast
  • 650 grams flour
  • 1 egg
  • 150 grams Butter, if not salted, add a pinch of salt
  • 1 egg yolk, optional

Recipe's preparation

  1. 1. To remove the cardamon from the cardamon pods, gently crush the pods. (I find it easy to roll my pestle over them with the pods on a cutting board.)

     

  2. 2. Place cardamon into the TM bowl and dry roast until fragrant.

     

    20-30 seconds /  Varoma / speed 1

     

  3. 3. Add the MC and mill the cardamon until it looks a bit like cracked pepper.

     

    20-30 seconds / speed 9

     

  4. 4. Place milk, sugar, and yeast into the mixing bowl. It's important to add the milk first to cool the bowl before adding the yeast.

     

    2 minutes / 37ºC / speed 2

     

  5. 5. Add flour and egg and knead 10 minutes / Dough mode"Dough mode" . After it first comes together, add the butter bit by bit through the hold in the mixing bowl lid.

     

  6. 6. Transfer dough to a large bowl and cover with a damp tea towel or plastic wrap and let prove in a warm place until doubled in size. (1 - 2 hours.)

     

  7. 7. Shaping the loaves Divide the dough in half, then each half into either 3 or 4 pieces. Roll each piece out into a 'snake', then braid the snakes together into 2 braided loaves.

     

  8. 8. Gently place loaves onto a baking tray, cover with a damp tea towel or plastic wrap, and leave to rise in a warm place until doubled in size.

     

  9. (Optional) Brush surface with egg yolk.

     

  10. 9. Bake for 16 - 20 minutes in a pre-warmed 180ºC oven or until golden brown. The loaves should sound hollow when tapped.

     

Tip

Let prove in a warm place; if it is cool, you can turn the oven on for a few moments to warm then turn the oven off, place dough in, and close the door. But don't forget to turn off the oven!

Near the end of baking, if the top is golden but the bottom doesn't sound hollow when tapped, take the bread off the baking tray, put the bread directly onto the oven shelf, and let bake for another 2 - 4 minutes.

Let children either help shape the braids or form their own shapes.
