- 440 grams water
- 1 teaspoon sugar
- 10 grams Yeast
- 600 grams bakers flour
- 2 teaspoons bread improver
- 1 teaspoon salt
- 30 grams olive oil

1. Place water, yeast and sugar into mixing bowl and heat 1 min /37C/speed 1.
2. Add flour, salt, bread improver, and oil and mix on speed 6 for 10 seconds. "Closed lid"
3. Knead for 6 minutes. "Dough mode"
4. Transfer dough ro pre-heated thermoserver and allow to double in size(this takes about 45 min).
5. Turn the dough out onto floured surface and punch down.
6. Shape dough and place in oiled loaf tin and wipe water over the top with your hands. Leave to rise above the top of tin (takes about 15-20 mins).
7. Once risen, put into a cold oven and set temperature to 200C. Bake for 35 minutes (inclusive of warm up time).
8. Take loaf out of tin and return to oven for a few minutes to make outside of loaf crunchy.
Tip
Add a couple of tablespoons of linseeds just before the kneading step for an Omega-3 hit (it also tastes great and makes the bread look a bit more fancy!)
