- 220 g Mixed fruit
- 230 g sugar
- 450 g Butter
- 1 teaspoon bicarb soda
- 1 teaspoon Nutmeg
- 1 teaspoon mixed spice
- 250 g water
- 1 egg
- 150 g plain flour
- 150 g SR flour

Ingredients:
220g Mixed Fruit
230g Sugar
450g Butter
1tsp bi-carb soda
1tsp Nutmeg
1tsp Mixed Spice
250g Water
1 Egg
150g Plain Flour
150g SR Flour
Place all ingredients except egg, flour and SR flour into TM bowl and cook 90deg, 15 mins, REVERSE, Speed 1.
Allow mixture to cool.
Add remaining ingredients: egg, flour and SR flour
Mix 15 seconds Speed 3.
Bake in middle shelf for 1 - 1 1/2 hours or until cooked through (test by inserting skewer, if clean once removed it is done). Allow to cool before removing from tin.
Can be decorated with Royal/Fondex icing, dusted with icing sugar or served with plain or brandy custard.
This mixture is also beautiful made into and served as individual mini puddings. Simply separate mixture into a greased (12) muffin tin.
Pre-heat oven to 160deg. Grease cake tin with olive oil spray.

Soooo, I've been making this one alot but have had to adjust it quite a bit. The first time I made it to the recipe, the fruit was too moist and the cake fell apart. Although, it tasted amazing and was extremely moist. So much so, that my friend who is getting married wants me to make this as her wedding cake.
After my practice rounds, I've added about 20g more dried fruit with the first batch of ingredients. I've then added a small bag of glace cherries, nuts and a couple of handfuls more of dried fruit to give it a more dense texture.
I've also used allspice, yes, I know, ground pimento effectively. And, people love it.
