Ingredients

  • 45 grams caster sugar
  • 70 grams thickened cream
  • 360 grams dark chocolate, (2 blocks of 180 gram dark chocolate)
  • 1 tablespoon orange juice
  • 1 teaspoon Orange rind
  • 50 grams white chocolate
  • few drops orange food colouring, (red and yellow)

Recipe's preparation

    Directions
  1. Line tray with baking paper.

    Place sugar and 1.5 tablespoons warm water in a small saucepan over low heat. Cook, stiring, for 5 minutes or until sugar has dissolved. Increase heat to medium. Bring to boil. Cook, without stirring , for 8 to 10 minutes or until deep golden. Remove from heat. Pur mixture on tray. Stand until set.

    When set place into Thermomix 1 sec/speed 2 - should have nice little crispy pieces for your truffles.

     

  2. Meanwhile, put 180 grams dark chocolate into Thermomix bowl, 8 seconds/speed 9. Add cream, 3 to 4 minutes/50 degrees/speed 3. Check melted and smooth, add orange juice, 2 seconds/speed 3. Put aside and allow to cool for 20 mintues. 

    Add toffee pieces to chocolate (after the 20 minutes) and then put into fridge 3 to 4 hours or until firm.

     

  3. Line a tray with baking paper.

    Using 2 teaspoons of chocolate mixture at a time, roll into balls. Place on tray and freeze until firm.

    Place remaining dark chocolate (180 grams) into Thermomix, blitz on 8 seconds / speed 9. Then melt chocolate 4 minutes/50 degrees/speed 3, until melted and smooth. Place choloate into a bowl, to dip chocolates.

     

    Using  a fork, dip truffles into chocolates, shaking off excess. Return truffles to tray. Refridgerate until set.

  4. Place white chocolate into Thermomix bowl, blitz 8 seconds/speed 9. Then melt 3 min/50 degrees/speed 3 - until melted and smooth.

    Add few drops of orange (red and yellow) food colouring to tint for stripes on chocolates. Spoon into snap-lock bag, snip off one corner and pipe over truffles.

    Refridgerate 20 minutes or until set. 

Tip

This recipes requires 4 hours refridgeration time.

Can be made in all Thermomix models, I used the TM5 to make mine.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
