Ingredients

Base

  • 200 grams almonds
  • 40 grams raw cacao powder
  • 30 grams Raw Honey
  • 30 grams coconut oil

Nice Cream Filling

  • 50 grams almonds
  • 40 grams Desiccated Coconut
  • 10-20 grams Raw Honey
  • 1 teaspoon Vanilla Bean Paste
  • 30 grams coconut oil
  • 200 grams Coconut Cream or Coconut Milk

Optional Chocolate Topping

  • 120 grams 70% Dark Chocolate
  • 25 grams coconut oil

Recipe's preparation

  1. Base:

     

    Place almonds and cacao into bowl, mill 10sec sp10

    Add honey and coconut oil, combine 30sec sp5 until a crumbly texture is achieved

     

    If setting as a slice, pour the base contents into your dish and press down firmly with a spatula to smooth out

     

    If setting as individual portions, use a silicone mini muffin tray (to easily remove) and cover the bottom of each section with the base contents

     

    Freeze while making the Nice Cream filling

     

    Nice Cream Filling:

     

    Place almonds and coconut into bowl, chop 10sec sp10

    Add remaining ingredients and combine 20sec sp5

    Pour over muffin tray sections or slice and freeze for a couple of hours to enable the Nice Cream to freeze/solidify

     

    Optional Chocolate Topping:

     

    Place chocolate into bowl, grate 10sec sp10

    Add coconut oil and melt 2min 50deg sp2. Freeze to solidify

Tip

Please note this will no longer be Paleo if you add the chocolate topping. You could replace with cacao powder and coconut oil but it'll melt quicker.

 

make it choc-mint by adding a couple of drops of pure essential food grade peppermint oil (I prefer dōTERRA). Wild Orange for a Jaffa flavour.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
