- 100 grams water
- 1 and a 1/ tsp gelatine power
- 4 portion whole mangos (medium)
- 50 grams lemon juice
- 25 grams lime juice
- 1 portion lime zest
- 100 grams caster sugar
- 3 portions egg white
- 1/4 tsp cream of tartar
- 100 grams thickened cream (chilled)

1: Place water in a bowl and sprinkle gelatine over the water and set aside.
2: place mango cheeks (discard skin and stone) in TM bowl. Add lemon juice, lime juice, lime zest and mix for 5 seconds on speed 6, for a further 10 seconds mix on speed 5 and add gelatine mixture and mix for 10 seconds on speed 4, pour all mixture into bowl and set aside.
3: Clean and thoroughly dry TM bowl. place butterfly add egg whites and cream of tartar mix on speed 4 for 1 minute or until peaks form. mix for further minute on speed 4 gradualy adding 1/2 cup of sugar. fold meringue mix to set aside mixture.
4: clean bowl and insert butterfly mix cream on speed 4 for 40 seconds with remaining 1/2 cup of sugar. add mango/meringue mixture to the TM bowl and mix for 10 seconds on speed 3 or until combined.
5: divide into ramikins or tall disposable wine/parfait glasses. chill in fridge for approx 3 hours. overnight is for best results.
when serving serve with choppped mango, serve chilled.
other serving suggestions: add some chopped meringue pieces over the top of the mango pieces in the parfait glasses.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
