Chunky Basil and Lemon Crusted Salmon
- 4 salmon fillets, fresh
- 1 Lemon zest and juice
- 1 garlic clove
- 160 g Cashews
- 40 g Basil leaves
- 40 g olive oil
- 2 tbsp Parmesan cheese
- 30 g breadcrumbs

Place lemon zest, juice, garlic and parmesan cheese in TM bowl and chop for 10 seconds on speed 8.
Add cashews, basil, olive oil and bread crumbs into TM bowl and set dial to closed lid position.
Pulse with turbo button for about 4-5 pulses until combined and forms a sticky mixture.
Spread a thick layer of basil mixture on each salmon filltet.
Bake salmon in the oven for 15 minutes at 180 degrees or until your liking.

Made it for a dinner party - so delicious, it impressed everyone! I used 6 large fillets tightly packed in a casserole dish and crumbled the topping over. The salmon was thickish and took 30 mins to cook.
