Ingredients

Beef and Mushroom Casserole

  • 2 cloves garlic, peeled
  • 1 brown onion
  • 20 grams olive oil
  • 400 grams cassorole, rump or chuck steak, diced into 2-3 cm cubes
  • 1 1/2 tablespoons plain flour
  • 20 grams red wine
  • 2 carrots, medium sized
  • 200 grams mushroom, chopped, halved and sliced
  • 2 tablespoon TM vegie stock
  • 100 gram water
  • 1 tablespoon tomato paste
  • 1 bunch parsley, chopped
  • 1 bay leaf

Recipe's preparation

    Method
  1. Put parsley into TM and chop on speed 7 for 3 sec. Put into another bowl and set aside.

    Chop garlic and onion in TM for 3 sec on speed 7.

    Add oil and saute for 4 min at 100 degrees on speed 1 MC off.

    Add diced meat and cook for 7 min at Varoma temp on Counter-clockwise operation"Counter-clockwise operation" soft speed, MC off.

    Add flour and cook for 1 min on Varoma, Counter-clockwise operation"Counter-clockwise operation" speed soft.

    Add red wine and cook for 2 min on Varoma,Counter-clockwise operation"Counter-clockwise operation" speed soft.

    Add carrot, mushrooms, TM vegie Stock, water and tomato paste, and bay leaf. Cook for 35 min at 100 degrees MC on, Counter-clockwise operation"Counter-clockwise operation" Speed Soft.

    Add parsly 5 min before end of cooking time.

    Serve over rice or ribbon pasta

Tip

You can substitute the beef with diced chicken, and the red wine with a white wine for a lovely chicken and mushroom casserole. Cook for 10 minutes if using chicken and prefereably the thigh fillet so that it holds it's shape.

    This is my favorite Thermomix recipe. Always my “go to recipe”. Love it. I serve it with rice. I have not had the burning problem. Using TM5

    This recipe was created in a TM31. You can try an extra 2-300 grams if using a TM5 but I would not put too much more. Remember to increase your cooking time. After each addition scrape the bottom of the bowl.  I did not get the burning in the TM31.

    Love this casserole! I didn't have 200g of mushrooms so to bulk it up a bit I used 1 large potato cut into smallish cubes I added the potatoes when I added the red wine in. I dont know if anyone else had this problem but mine burnt to the bottom of thermie pretty bad, The only downside! Thank you for sharing!

    I was short on time, so I tried this recipe out. I was worried about the short cooking time, but it turned out great. I let it sit after cooking for about 10-15 minutes whilst I boiled some potatoes on the stove top. Letting it sit, meant the meat rested and it was so it was extra tender. Will definitely try this one again.

    You can increase the beef and mushrooms, however i wouldn't double everything as it would not fit in the TM bowl.

    Really liked the dish - put onion in with garlic. Used chicken and cooked for only 15 mins. It was more like shredded. A little bit salty - maybe cut down vege stock. Also used white wine in place of red. Didn't know where to put bay leaf so left that out!! Will try again with beef.

    I am new to Thermomix, can someone please tell me if this recipe can be doubled, I would need a lot more meat than is stated, thanks tmrc_emoticons.)
