Ingredients
Cauliflower rice
- 1/2 cauliflower head
- 1 tablespoon carraway seeds
Chicken & eggplant stew
- 2 garlic cloves
- 1 teaspoon coconut oil
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1 teaspoon turmeric powder
- 1 teaspoon paprika ground
- 1 teaspoon ground cumin
- 550 gram tomatoes, roughly chopped
- 1 chilli, (optional)
- 500 gram eggplant, chopped in 2cm pieces
- 650g chicken thighs, chopped in 2cm pieces
- 1 teaspoon Veg Stock Paste
- 1 teaspoon basil

1. Place cauliflower into TM chop 3sec sp5.
2.Place to one side in a bowl. Mix in carraway seeds
4. Place tomatoes in TM chop 3sec Sp5. Place in a another bowl to one side
5.To TM add garlic & chilli. Chop 4sec Sp7. Scrape side.
6.Add coconut oil. Cook 3min Varmoma Sp1
7.Add all spices. Cook 1min Varoma. Scrape bottom and sides.
8.Add chicken cook 4 mins Varoma "Counter-clockwise operation" Sp1
9.Add reserved tomatoes and stock paste 10 mins Varoma "Counter-clockwise operation" Sp1
10.Add eggplant cook for a further 10mins Varoma "Counter-clockwise operation" Sp1 MC removed with steamer basket on top.
11.Add basil
12. Heat some Coconut oil in fryin pan. Heat
13. Add cauliflower rice and cook until your liking

Tip
For perfect eggplant chop eggplant into 2 cm squares. Place into a bowl & generously apply salt allow to sit for up to a hour. If you dont have much time 10mins will be fine just massage and slighlty squeeze eggplant to work the salt in and draw out moisture. Once ready rinse well under water and place on paper towel making sure to dry of completely.

Just made this for dinner. I had finger eggplants from the garden to use, and chicken in the freezer, so this was a perfect match. The blend of the spices was really lovely. I don't eat much cauliflower so I used something different.

Nice, easy, healthy dish. Next time I'll add more oil or use chicken pieces to improve the texture and coriander to add flavour. Thanks for posting.
I made this last night and it was a lovely, healthy and very tasty dish. Next time I will only put a teaspoon of the Carraway Seeds into the Cauliflower rice as they were slightly overpowering.
