Ingredients

Dim Sim Mixture

  • 500 grams minced meat, Pork, chicken, beef or lamb
  • 2 bunches chives, fresh
  • 6 cloves garlic, fresh and peeled
  • 5 centimetres Ginger, fresh & peeled
  • 2 bunches Coriander, fresh, including roots
  • 1 --- Whole Australian Shallots, peeled
  • 2 level teaspoons soy sauce
  • 1 level tablespoon Chinese Rice Wine
  • 1 level tablespoon white pepper
  • 2 heaped teaspoons sugar
  • 3 teaspoons salt
  • 1 teaspoon sesame oil
  • 3 pieces lap cheong(Chinese Sausage), Cut in half

Wonton Wrappers

  • 1 package square wonton wrappers
  • 2 eggs whole

Oil for Frying

  • 1 Quantity of peanut or vegetable oil
  • 1 level teaspoon sesame oil

Recipe's preparation

    Dim Sim Mixture
  1. put meat aside. Put all remaining ingredients into TM bowl and chop on speed 9 for 15 seconds. Add the meat to the mixture, scrape sides of bowl down also. Mix together on speed 8 for 20 seconds or until mixture is fully combined

    the last ingredient is available in most supermarkets, usually in the Asian section. See photo At the side.

  2. Wonton Wrappers & Egg Wash
  3. Mix the eggs together in a small bowl. Using a pastry brush cover the outer area of the wonton wrapper, it doesn't matter if you egg wash the whole wonton. 

    Add a teaspoonful of the dim sim mixture to the centre of the wrapper then pull all corners together and twist them so the wrapper is sealed. Complete until all wrappers are finished.

  4. Frying Dim Sims
  5. put a quantity of the oil in to a wok or a deep pan, add the sesame oil and wait until the oil is hot enough to fry the dim sims. Usually you will see the oil start moving around.

    on e the oil is hot enough add a small amount of dim sims. The dim sims are cooked when they are brown all over. Remove from oil with a spider (metal webbed tool) or Tonga. Be careful the mix can spit when putting dim sims in to oil. Place on an absorbent towel. Then serve.

Tip

You can also add cabbage to the mixture to give it a bit of texture. Serve hot or cold.
