Ingredients

spring Roll Mixture

  • 500 grams pork mince, Can also use chicken or beef or combination of minces
  • 4 cloves garlic, Peeled
  • 1 piece ginger, Peeled, about 5cms. More or less depending on taste
  • 1 level tablespoon soy sauce
  • 1 package Vermicelli rice noodles, Small packet, rehydrate in boiling water for 5 mins
  • 6 shiitake mushrooms, Rehydrate in same boiling water as vermicelli noodles for 5 mins
  • 3 pieces chinese sausage, Optional
  • 2 heaped teaspoons white pepper
  • 1 some chives fresh, A handful if possible
  • some coriander, fresh, Use leaves, stems & roots
  • 1 carrot, Grated. Set aside

Spring Roll Wrapper Glue

  • 3 heaped tablespoons plain flour
  • 1 level tablespoon water

Spring Roll Wrappers

Oil to deep fry Spring Rolls

  • 1 litre vegetable or peanut oil
  • 1 tablespoon sesame oil, Optional, but gives better flavour if used

Recipe's preparation

    Spring Roll Wrappers
  1. Open the packet of frozen Spring roll wrappers. Place a damp cloth or tea towel over them whilst you make the mixture so that they don't dry out. When it is time to use the wrappers, it is easier if you pull them apart before you are ready to roll them. Do this carefully as they can tear. Place the first one down on the bench as a square, then the next one as a diamond shape and repeat. This makes it easier when you have to roll them.

  2. Spring Roll Mixture.
  3. Boil water and place shiitake mushrooms and vermicelli rice noodles into a medium sized bowl. Cover with boiling water and leave for 5 minutes. 

     

    In your thermomix bowl, add garlic, ginger, coriander, chives and Chinese sausage. Mix for 6 seconds on speed 8. Add all other ingredients, except for the carrot (this includes the vermicelli rice noodles and shiitake mushrooms. Make sure you drain the liquid from these first, because too much liquid will ruin your Spring Rolls. Discard the liquid). 

     

    Once all mixed, add the grated carrot and stir mixture on speed 3 for 15 seconds or until carrot is evenly distributed through the mix.

  4. Spring Roll Wrapper Glue
  5. arrange Spring Roll Wrappers, as descrI end earlier so that the wrappers are easier to use.

    in a small bowl mix the flour and water until it resembles a paste. You may need to add more water or flour until you get the right consistency, just make additions in small amounts.

  6. Constructing Spring Rolls
  7. Take a wrapper & place it on the bench so it's shape resembles a diamond. Add 2 teaspoons of the Spring Roll Mixture in a line along the bottom third of the wrapper. Don't put it close to any ends. Grab the bottom of the wrapper and roll over the mixture tightly and tuck the wrapper under the mixture. Roll up and then tuck left and right sides in before completing the roll. Use the glue and put a small amount on the last point of the wrapper then stick this to the roll. You've now made one Spring Roll. Repeat until all are made.

  8. Oil for Deep Frying
  9. Put both oils into a deep pan or use a deep fryer. When oil reaches a high temperature, add Spring rolls. I use a large pan and never put in more than 7 Spring rolls at a time as they cool your oil down too much if there are too many added at once. 

    Cook until they are brown all over. Usually takes between 3-5minutes, but do check with a test one if you're not sure.

    Drain Spring Rolls and serve.

Tip

A quick dipping sauce to accompany Spring Rolls is 3 tablespoons of sweet chilli sauce mixed with 1 tablespoon sweet soy sauce (Kecap Manis), combine and add a small handful of chopped chives or shallots (green part only).

The more you practice making these Spring Rolls, the better you will be at churning them out. Just remember to keep them as tightly rolled as possible. Have fun!
