Ingredients
Kefta and Potato Casserole with Lebanese Rice
- 500 gram Kefta meat
- 3 potatoes
- 500 gram tomato passata
- 1 level tsp salt
- 2 level tsp 7 spice (mixed lebanese spice)
- 1 heaped tablespoons capsicum paste
- 1 onion
Lebanese Rice
- 350 gram rice
- 200 gram Vermicelli noodles
- 1 level tsp salt
- 1 heaped tbsp Butter

- 1. Separate your kefta mince into 2cm balls and sear in a hot pan with olive oil.
2. while cooking, peel and dice potatoes into cubes of a similar size.
3. Add partiallly cooked kefta and raw potatoes into the simmering basket and set aside.
4. add onion to the TM bowl. Chop 5 seconds spd 7
5. add 25g olive oil and capsicum paste and sautee 2 mins spd 1.5
6. add passata, salt and lebanese spice to the TM bowl.
7. Insert the simmering basket back into the tm bowl and place lid on top.
8. Cook all ingredients 40 mins 100deg spd 3.5
9. Once it has cooked, remove basket and empty into a bowl;
Pouring the sauce over the top.
10. Enjoy next to some lebanese rice. - 1. place rice into the basket.
2. Fry off cracked vermicelli noodles in a pan with butter until golden.
3. Mix noodles into the uncooked rice and salt.
4. Place 1000g water into the bowl.
5. Place simmering basket into the tm bowl.
6. Cook 20mins 100g spd 3
7. Once complete, remove rice from the basket and fluff it up with a fork.

Can add pomegranite molasses to the sauce for extra flavour.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
