- 60 g parmesan cheese, grated
- 1 Brown onion quartered
- 60 g Butter
- 40 g olive oil
- 5 slices Shortcut Bacon, roughly chopped
- 60 g dry white wine
- 320 g Aborio Rice
- 2 tsp Chicken stock powder, (or 1-2 Tbsp vegetable stock concentrate)
- 750 g water
- 250 g mushrooms, sliced
- 3 sprigs parsley, (To taste)
- black pepper, freshly ground, (To taste)
- 1 tsp raw sugar, (Optional)

I have Parmesan grated in advance and keep in a zip lock bag in the fridge ready for use.
1. Place onion in mixing bowl and chop at 3 secs/speed 5. Scrape down sides of bowl.
2. Add butter and olive oil. Sauté 3 mins/Varoma/speed 1 without measuring cup.
3. Add roughly chopped bacon. Sauté 2 mins//Varoma/speed 1
4. Add Aborio rice. Sauté 1 min//Varoma/speed 1.5
5. Add white wine. Sauté 2 mins//Varoma/speed 1.5. Scrape bottom of mixing bowl with spatula To loosen rice.
6. Add stock, water, mushrooms, roughly chopped parsley, and black pepper. Scrape bottom of mixing bowl again.
7. Cook 15 mins/100 Deg.C//speed 1.5, placing simmering basket on top of lid instead of measuring cup.
8. Place spinach leaves in Thermo server, pour risotto on top of spinach and let sit for 5 mins. Then stir in grated Parmesan which also combines in the spinach leaves.

This was nice. I put 2tbsp stock concentrate in and I found it a bit too salty. Otherwise I enjoyed it
This is the best risotto recipe in the recipe community! The quantities of solids to liquids works perfectly. I didn't have bacon so I added cooked shredded chicken with the mushrooms. I also added porcini mushrooms and swapped 1/3 of the stock for the water I soaked them in. Lastly I added a couple of tablespoons of sour cream to add some creaminess. It turns out perfectly every time!

I didn't have Parmesan, so I used tasty cheese and goats feta and it came out beautiful!
Delicious. I only added 300g of rice and added a cube of frozen spinach with the second last step. It turned out perfect. Will definitely cook this dish again.
Delicious! As no spinach was listed in ingredients, I added a 60g bag of fresh baby spinach which was quite perfect, maybe a little more next time. Kids absolutely loved it... it's a rare occurrence for all 3 to agree 😂

I made this when the in-laws came over - always a gamble making a recipe you’ve never made before for guests. But it was a total win. I had no wine () but just used water. I also microwaved some pumpkin while it was cooking and added that at the end to make it go further and served with some flat pizza style garlic and herb bread. Yum!!

This will definitely be a regular on our menu. I forgot the spinach, but the kids didn't mind. They all said the favour was delicious and can I make again.
The only thing they did say was it was bordering on being to salty. So next time instead of 1 1/2 tbsp of vsc I'll use just under 1 tbsp.
