Recipe's preparation

    To make butter:
  1.  

     

    1. Insert butterfly into clean, dry bowl and pour in cream.

     

    2 Whip for around 2 minutes on Speed 4 or until liquid buttermlik separates from the butter solids. 

     

    3. Remove butterfly and use the steaming basket to strain off the buttermilk. Reserve buttermilk for use in bread or scones.

     

    4. Add chilled water to the bowl over butter solids and wash the butter for 5-7 seconds on speed 4.

     

    5. Use your steamer basket to strain the liquid off again and to ensure really clean butter, repeat step 4 with another 500 grams chilled water.

     

    6. Remove butter from bowl and set aside.

     

    7. Peel the black garlic and add the cloves  (and any herbs - see tips below) to the thermomix.


    8. Chop on speed 6 for 4-5 seconds. Remove lid and scrape down sides. The garlic is quite sticky but just scrape down as best you can.

     

    9. Chop again on speed 4 for 2-3 seconds.

     

    10. Add butter back into bowl and combine ingredients for 15-20 seconds on speed 4 Counter-clockwise operation"Counter-clockwise operation" .



     

Tip

Black garlic is garlic that has been slowly fermented to produce a caramelised result that combines a tangy sweetness with an addictive umami flavour.

This compound butter is endlesslessly versatile: 

Add some sprigs of tarragon when you chop the garlic and use it to smear under the skin of a whole chook before roasting.

Or add parsley instead to make a deceptively simple and delicious crostini.

Add a knob of the butter to a heavy pan and when foaming use to quickly sear some scallops or fry some eggs. Drizzle remaining butter over the top of them once plated.

Or simply melt a generous smear on top of a cooked piece of fillet steak. 

And as if you needed anymore incentive, it apparently has double the anti-oxidants of normal garlic and won't leave you with garlic breath!
